Recently I discovered a delicious new breakfast option and I just had to tell you all about it. If you’re looking for something yummy to get your day started that is easy to make, will keep you feeling full and is (surprisingly) healthy, look no further than Kodiak Power Cakes! My family introduced me to this brand and I just LOVE the pancakes that you can whip up from this mix. They are very simple to make, the instructions dictate mixing a 1 to 1 ratio of powder to water or milk for the batter (1/2 cup mix, 1/2 cup milk, for example). I use milk and also like thin pancakes so I add a bit more than what is recommended.
Once the batter is mixed, fry them up just like you would any other pancake! I melt butter on medium high heat and actually like them slightly burnt and a bit on the crispy side :D. The Kodiak mix can be used to make pancakes, but you can also make waffles, quiche, biscuits, muffins or a number of other things (check out other recipes by clicking here).
Once the pancakes are done, the final touch is drizzling them with syrup. It should be noted, however, that adding this bit of sweetness does affect the healthiness aspect (Oh well!). At least you can feel good about the 14 grams of protein and 5 grams of fiber no matter what you add on top (butter, syrup, peanut butter, anyone?).
